The roots of Southern cooking date back to the time of the earliest settlers in the American South, when malnourished refugees fled England for a new home in the American South. They were seeking religious freedom and settled in Massachusetts and Virginia, eventually establishing successful settlements in the region. Today, a wide range of dishes sprang from the natives of these regions. For example, fried chicken is an important part of Southern cuisine.

The southern cuisine is rich in history and tradition. The Native American Indians used corn and other grains in their food. Later, Spanish settlers introduced pigs to the region and brought pork and other staple foods. Among other things, the African people brought okra and black eyed peas.
